- 4 ripe bananas, sliced
- 1 tablespoon unsalted butter
- ¾ cup packed brown sugar
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- ¼ teaspoon ground nutmeg
- 1 tablespoon dark rum (optional)
- Pinch of salt
- 1½ cups all-purpose flour
- 1 tablespoon baking powder
- ¾ cup granulated sugar
- ½ teaspoon salt
- 6 tablespoons cold unsalted butter, cubed
- ½ cup buttermilk
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 375°F (190°C). Grab a 9-inch baking dish-no need to grease it.
- Melt the butter in a large skillet over medium heat. Once it’s just starting to bubble, add your sliced bananas. Gently toss them around for about 1 minute-just until they start to soften.
- Add the brown sugar, cinnamon, nutmeg, and salt. Stir gently-you don’t want to mush the bananas! Let it bubble away for 2-3 minutes until the sugar melts into a gorgeous caramel sauce.
- Remove from heat and stir in the vanilla and rum (if using). Careful-it might sizzle! The bananas should be soft but not falling apart, swimming in that dreamy sauce. Pour everything into your baking dish.
Notes
- The ripeness of the bananas is crucial for the best flavor.
- You can substitute buttermilk with whole milk mixed with lemon juice if needed.
- Feel free to leave out the dark rum if preferred.
