Description

Delicious banana truffles made with a blend of white cake mix, cream cheese, and banana, coated in white candy and chocolate.


Ingredients

  • 15.25 oz box white cake mix heat treated
  • 8 oz block of cream cheese softened to room temperature
  • 1 teaspoon vanilla
  • ½ cup crushed pineapple very well drained
  • ¾ cup chopped walnuts
  • 1 banana sliced
  • 8 oz of white candy coating
  • ½ cup chocolate melting wafers
  • Rainbow sprinkles and stemmed maraschino cherries for garnishing

Instructions

  1. Prepare a large cookie sheet with parchment paper and set aside.
  2. In a medium mixing bowl, cream together the cake mix, cream cheese, and vanilla extract until fully combined and “dough-like”.
  3. Add in crushed pineapple, chopped walnuts, and banana slices. Mix until equally distributed.
  4. Using a 1-2 inch cookie scoop, scoop the mixture and roll into 1 – 1-½ inch balls. Smooth and round each ball with the palms of your hands.
  5. Place each truffle ball on the parchment paper and refrigerate for 1 hour.
  6. About 5-10 minutes before the chilling time is complete, prepare your candy coating by heating it in a microwave safe bowl at 50% power for 1 minute, stirring, then returning for 30 second intervals until melted.
  7. Dip each chilled truffle ball into the melted white candy coating, ensuring it is fully covered.
  8. Place each coated truffle back on the parchment paper and refrigerate again for 30 minutes.
  9. While the truffles chill, melt the chocolate melting wafers similarly until silky smooth.
  10. Spoon a small dollop of the melted chocolate over each truffle for decoration, place a stemmed cherry on top, and add sprinkles.
  11. Return to the refrigerator for an additional 30 minutes before serving.

Notes

  • Ensure the cake mix is heat-treated to eliminate any risk of salmonella.
  • For a smoother dough, make sure the cream cheese is well-softened.
  • Use a small spoon to control the amount of melted chocolate for topping.
  • Work on one truffle at a time when adding the cherry and sprinkles.
