Description

Indulge in these delicious banana nut cinnamon rolls, filled with sweet bananas, combined with walnuts, and topped with a creamy icing.


Ingredients

  • 1 package active dry yeast
  • 1/2 cup water lukewarm
  • 1/2 cup sugar divided
  • 1/2 cup milk scalded
  • 1/3 cup butter unsalted, melted
  • 1 large banana mashed
  • 1 teaspoon salt
  • 4 cups all-purpose flour (plus more for kneading + rolling)
  • 2 tablespoons butter softened
  • 3/4 cup brown sugar
  • 1 1/2 tablespoons cinnamon
  • 1/4 teaspoon nutmeg
  • 3 bananas
  • 1/2 cup walnuts finely chopped
  • 2 ounces cream cheese softened
  • 4 tablespoons butter unsalted, softened
  • 1 1/2 cups powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 2 tablespoons milk (as needed)
  • 1/4 cup walnuts finely chopped (optional)

Instructions

  1. Add yeast and 2 teaspoons of the sugar to lukewarm water and let it sit for about 10 minutes.
  2. In a mixing bowl, combine scalded milk, melted butter, mashed banana, remaining sugar, and salt. Mix on low speed until combined.
  3. Add half of the flour and mix until smooth, then add yeast mixture and mix on low. Gradually add the remaining flour until incorporated.
  4. Knead the dough on a floured surface for 5 minutes, then place in a greased bowl, cover, and let rise until doubled in size, about 1.5 hours.
  5. Once risen, punch down the dough and roll it out on a floured surface into a 16×24 inch rectangle.
  6. Spread the remaining melted butter on the dough, then mix brown sugar and cinnamon and sprinkle it across the butter.
  7. Layer sliced bananas and chopped walnuts over the brown sugar mixture.
  8. Roll the dough into a log, then cut into 12 even slices.
  9. Butter a 9×13 baking pan and place the slices close together. Cover and let rise until doubled, about 1-1½ hours.
  10. Preheat the oven to 375°F with 20 minutes left for the rolls to rise. Bake for 22-24 minutes until golden brown.
  11. While baking, mix cream cheese, butter, powdered sugar, vanilla, and salt. Add milk to achieve desired thickness.
  12. Let the cinnamon rolls cool for 10 minutes, then pour icing over them and serve warm.

Notes

  • Make sure the dough is has doubled in size during the rising process.
  • Use a serrated knife for cutting to avoid squishing the dough.
  • Adjust icing thickness based on preference—more milk for runnier icing, less for thicker icing.
