  • 1/8 teaspoon ground cinnamon

Instructions

  1. In a medium mixing bowl, whisk together eggs, milk, melted butter, and vanilla extract until well combined. Set aside.
  2. In a large mixing bowl, combine flour, brown sugar, baking powder, cinnamon, and salt. Pour the wet ingredients into the dry ingredients and mix until just combined.
  3. Fold chopped bananas into the batter until evenly distributed.
  4. Place a large pot over medium-high heat. Add enough vegetable oil to reach 2 inches depth in the pot. Heat the oil to 350°F (175°C).
  5. Using a small cookie scoop or tablespoon, carefully drop 3-4 scoops of fritter dough into the hot oil. Fry for 4-5 minutes, flipping occasionally, until the fritters are golden brown on all sides.
  6. Remove the fritters from the oil using a slotted spoon and place them on a paper towel-lined tray to drain excess oil. Repeat until all the batter is used.
  7. Once the fritters have cooled, prepare the glaze by whisking together powdered sugar, milk, vanilla extract, and ground cinnamon in a medium mixing bowl until smooth.
