Instructions
Step 1: Prepare Your Muffin Tin
- Preheat your oven to 350°F (175°C).
- Line a 12-cup muffin tin with paper liners or grease with nonstick spray.
Step 2: Mix the Dry Ingredients
- In a medium bowl, whisk together the flour, baking soda, baking powder, cinnamon, and salt. Set aside.
Step 3: Blend the Wet Ingredients
- In a large bowl, mash the bananas until mostly smooth.
- Add cottage cheese, eggs, honey, olive oil, vanilla, and milk. Whisk until well combined.
Step 4: Combine Wet & Dry Ingredients
- Gradually add the dry ingredients into the wet mixture. Stir gently until just combined—don’t overmix!
- If using add-ins like nuts or chocolate chips, fold them in now.
Step 5: Bake the Muffins
- Divide the batter evenly among the muffin cups, filling each about ¾ full.
- Bake for 18–22 minutes, or until a toothpick inserted in the center comes out clean.
- Let muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
