Description

A delicious and healthy pudding made with mashed banana, coconut milk, and chia seeds, perfect for breakfast or a snack.


Ingredients

  • 1 cup of coconut milk (canned or carton)
  • 1 ripe banana
  • 1 teaspoon of vanilla extract
  • 1 tablespoon of maple syrup (optional)

Instructions

  1. Mash the ripe banana in a mixing bowl using a fork or potato masher until smooth.
  2. Add the chia seeds to the mashed banana and mix well.
  3. Pour in the coconut milk and stir until everything is fully combined.
  4. Add the vanilla extract and mix thoroughly.
  5. If desired, add the maple syrup for extra sweetness and stir to combine.
  6. Transfer the mixture to clear glasses or bowls for serving.
  7. Place the glasses or bowls in the fridge and let them sit for at least 2 hours or overnight to allow the chia seeds to thicken the pudding.
  8. Before serving, give the pudding a good stir to ensure even consistency.
