- 1 cup of coconut milk (canned or carton)
- 1 ripe banana
- 1 teaspoon of vanilla extract
- 1 tablespoon of maple syrup (optional)
Instructions
- Mash the ripe banana in a mixing bowl using a fork or potato masher until smooth.
- Add the chia seeds to the mashed banana and mix well.
- Pour in the coconut milk and stir until everything is fully combined.
- Add the vanilla extract and mix thoroughly.
- If desired, add the maple syrup for extra sweetness and stir to combine.
- Transfer the mixture to clear glasses or bowls for serving.
- Place the glasses or bowls in the fridge and let them sit for at least 2 hours or overnight to allow the chia seeds to thicken the pudding.
- Before serving, give the pudding a good stir to ensure even consistency.
