Instructions
- Prepare the Cake: Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan or line it with parchment paper.
- In a large mixing bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
- Add eggs, one at a time, beating well after each addition. Mix in the mashed bananas, buttermilk, and vanilla extract.
- In a separate bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon (if using).
- Gradually add the dry ingredients to the wet mixture, mixing until just combined. Avoid overmixing.
- Pour the batter into the prepared pan and spread evenly. Bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean. Cool completely.
- Make the Frosting: In a medium bowl, beat the cream cheese and butter together until smooth and creamy.
- Gradually add the powdered sugar, one cup at a time, mixing on low speed. Stir in the vanilla extract and a pinch of salt.
- Spread the frosting evenly over the cooled cake. Slice and serve.
