For the Cream Cheese Frosting:

  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 3 cups powdered sugar
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Prepare the Cake: Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan or line it with parchment paper.
  2. In a large mixing bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add eggs, one at a time, beating well after each addition. Mix in the mashed bananas, buttermilk, and vanilla extract.
  4. In a separate bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon (if using).
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined. Avoid overmixing.
  6. Pour the batter into the prepared pan and spread evenly. Bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean. Cool completely.
  7. Make the Frosting: In a medium bowl, beat the cream cheese and butter together until smooth and creamy.
  8. Gradually add the powdered sugar, one cup at a time, mixing on low speed. Stir in the vanilla extract and a pinch of salt.
  9. Spread the frosting evenly over the cooled cake. Slice and serve.

Notes

  • For extra flavor, add 1/2 cup chopped walnuts or pecans to the cake batter.
