Description

A delicious and healthy recipe for Balsamic Chicken Breast served with sautéed spinach and tomatoes, perfect for dinner.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 4 cups fresh spinach
  • 1 cup cherry tomatoes, halved
  • 1/4 cup grated Parmesan cheese (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a small bowl, combine the balsamic vinegar, olive oil, minced garlic, oregano, salt, and pepper. Stir until well blended.
  3. Place the chicken breasts in a baking dish and pour the balsamic mixture over them, coating evenly.
  4. Bake for 20 minutes in the preheated oven.
  5. While the chicken is baking, heat a large skillet over medium heat. Add the spinach and cherry tomatoes, cooking until the spinach is wilted and the tomatoes begin to soften, about 3-4 minutes.
  6. After 20 minutes, remove the chicken from the oven and top with the sautéed spinach and tomatoes.
  7. Place back in the oven and bake for an additional 10-15 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
  8. Optionally, sprinkle grated Parmesan cheese over the dish before serving.
