Description
A delicious and healthy recipe for Balsamic Chicken Breast served with sautéed spinach and tomatoes, perfect for dinner.

- 4 boneless, skinless chicken breasts
- 2 tablespoons balsamic vinegar
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 4 cups fresh spinach
- 1 cup cherry tomatoes, halved
- 1/4 cup grated Parmesan cheese (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- In a small bowl, combine the balsamic vinegar, olive oil, minced garlic, oregano, salt, and pepper. Stir until well blended.
- Place the chicken breasts in a baking dish and pour the balsamic mixture over them, coating evenly.
- Bake for 20 minutes in the preheated oven.
- While the chicken is baking, heat a large skillet over medium heat. Add the spinach and cherry tomatoes, cooking until the spinach is wilted and the tomatoes begin to soften, about 3-4 minutes.
- After 20 minutes, remove the chicken from the oven and top with the sautéed spinach and tomatoes.
- Place back in the oven and bake for an additional 10-15 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
- Optionally, sprinkle grated Parmesan cheese over the dish before serving.

- Adjust seasoning according to your taste.
- Serve with a side of whole grains or a light salad for a complete meal.
