A delicious baked funfetti donut recipe enhanced with protein, perfect for a sweet treat!
Ingredients

- 2 cups all-purpose or gluten-free flour
- 2 teaspoons baking powder
- ½ teaspoon baking soda
- ¼ cup vanilla protein (optional)
- ½ teaspoon sea salt
- ½ cup unsalted butter
- 2 large eggs or 1 cup applesauce
- ½ cup sugar
- ½ cup almond milk
- Rainbow sprinkles
- 1 teaspoon almond extract (for glaze)
- ½ cup powdered sugar (for glaze)
- 3 tablespoons melted butter (for glaze)
- Milk (as needed for glaze)
Instructions
- Preheat oven to 375°F (190°C). Spray a 6-donut donut pan with cooking spray and set aside. If you have two donut pans, prepare a second one with cooking spray.
- In a bowl, whisk together flour, baking powder, baking soda, sea salt, sprinkles, and protein powder.
- In another bowl, combine melted butter, egg or applesauce, sugar, and almond milk.
- Slowly fold the dry ingredients into the wet ingredients, stirring until just combined. Do not over-mix.
- Using a plastic bag, transfer the donut mixture into the bag and snip one bottom corner. Fill the donut pan with three circles of donut batter. Gently tap the donut pan to even them out.
- Bake for 10 minutes. Donuts are done when a toothpick comes out clean.
- For the glaze, mix all frosting ingredients except for sprinkles. Add milk as needed to reach the desired thickness.
- Dip donuts in the frosting, then top with sprinkles.
Notes
- Adjust the thickness of the frosting by adding more or less milk.
- Donuts can be stored in an airtight container for a few days.
- For a vegan option, substitute eggs with applesauce and use a plant-based butter.
