Ingredients

  • 50 grams granulated sugar
  • 50 grams brown sugar, packed
  • 120 milliliters milk
  • 60 grams unsalted butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 200 grams fresh blueberries
  • 1 tablespoon powdered sugar, for dusting

Instructions

  1. Preheat oven to 190°C and lightly grease a mini muffin tin.
  2. In a large bowl, whisk together flour, baking powder, salt, cinnamon, granulated sugar, and brown sugar until well incorporated.
  3. In a separate bowl, combine milk, melted butter, egg, vanilla extract, and lemon juice, mixing until smooth.
  4. Add wet ingredients to the dry ingredients and stir gently until just combined. Avoid overmixing to maintain tenderness.
  5. Carefully fold in the fresh blueberries, ensuring even distribution throughout the batter.
  6. Spoon the batter into each cavity of the prepared mini muffin tin, filling each approximately two-thirds full.
  7. Bake in preheated oven for 15–18 minutes or until the tops are golden and a toothpick inserted in the center emerges clean.
  8. Allow fritter bites to cool in the tin for 5 minutes, then transfer to a wire rack. Dust with powdered sugar before serving.
