- 50 grams granulated sugar
- 50 grams brown sugar, packed
- 120 milliliters milk
- 60 grams unsalted butter, melted
- 1 large egg
- 1 teaspoon vanilla extract
- 1 tablespoon lemon juice
- 200 grams fresh blueberries
- 1 tablespoon powdered sugar, for dusting
Instructions
- Preheat oven to 190°C and lightly grease a mini muffin tin.
- In a large bowl, whisk together flour, baking powder, salt, cinnamon, granulated sugar, and brown sugar until well incorporated.
- In a separate bowl, combine milk, melted butter, egg, vanilla extract, and lemon juice, mixing until smooth.
- Add wet ingredients to the dry ingredients and stir gently until just combined. Avoid overmixing to maintain tenderness.
- Carefully fold in the fresh blueberries, ensuring even distribution throughout the batter.
- Spoon the batter into each cavity of the prepared mini muffin tin, filling each approximately two-thirds full.
- Bake in preheated oven for 15–18 minutes or until the tops are golden and a toothpick inserted in the center emerges clean.
- Allow fritter bites to cool in the tin for 5 minutes, then transfer to a wire rack. Dust with powdered sugar before serving.
Notes
- Do not overmix the batter to keep the fritter bites tender.
- Fresh blueberries can be substituted with frozen, but they may require additional baking time.
