Ingredients

  • 1/4 cup dried cranberries
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon vanilla extract
  • 4 medium apples (such as Honeycrisp or Gala)
  • 2 tablespoons honey
  • 1 tablespoon unsalted butter, divided
  • 1 tablespoon chopped fresh mint (optional, for garnish)

Instructions

  1. Preheat the oven to 375°F and lightly grease a baking dish.
  2. Carefully core each apple, leaving approximately 1/2 inch of the base intact to hold the filling.
  3. In a small bowl, mix feta cheese, dried cranberries, ground cinnamon, and vanilla extract until evenly combined.
  4. Arrange the cored apples in the prepared baking dish and fill each apple cavity with the feta mixture, pressing gently.
  5. Drizzle honey over each stuffed apple and place a small portion of butter on top of each.
  6. Cover the baking dish with foil and bake for 25 to 30 minutes until the apples are tender.
  7. Remove foil and bake for an additional 5 to 10 minutes until the tops are golden.
