Instructions
- Preheat the oven to 375°F (190°C).
 - Prepare the apple mixture using Granny Smith or Honeycrisp apples.
 - In a large bowl, whisk together the dry ingredients: flour, sugar, baking powder, salt, cinnamon, and nutmeg.
 - In another bowl, combine the wet ingredients: eggs, milk, vanilla extract, and melted butter.
 - Gently fold in the diced apples into the batter.
 - Scoop heaping spoonfuls of batter onto a lined baking sheet, spacing them about 2 inches apart.
 - Bake for 14–16 minutes, or until golden brown and a toothpick comes out clean.
