Delicious and easy-to-make peanut butter oat bars topped with a rich icing, perfect for bake sales or any occasion.

			- 2 sticks salted butter, at room temperature
 - 1 cup creamy peanut butter
 - 1 cup brown sugar
 - 2 large eggs, at room temperature
 - 1 tablespoon vanilla extract
 - 2 cups all-purpose flour
 - 2 cups old fashioned oats
 - 1 teaspoon baking soda
 - 1 teaspoon salt
 - Icing: 1 ½ cups creamy peanut butter
 - 2 cups powdered sugar
 - 2 tablespoons unsweetened cocoa powder
 - 1 tablespoon vanilla extract
 - 2 ounces dark or milk chocolate, melted
 
Instructions
- Preheat the oven to 350° F. Line a 9×13 inch baking dish or 13×18 inch half sheet pan with parchment paper.
 - In a large mixing bowl, beat together the butter, brown sugar, 1 cup of peanut butter, and vanilla until combined. Beat in the eggs. Add the flour, oats, baking soda, and salt.
 - Press or spread the dough out into the prepared dish. Bake for 18-22 minutes, until just set in the center. Remove from the oven and dollop 1 ½ cups of peanut butter over the bars, lightly spreading it in an even layer. Let cool completely, chilling in the fridge to speed this up if desired.
 - In a bowl, whisk together the powdered sugar, cocoa powder, vanilla, and 3 tablespoons of water until smooth. Stir in the melted chocolate. If the icing is too thick, thin with 1-2 additional tablespoons of water.
 - Spread the icing over the cooled bars. Let set for about 1 hour, then slice and serve.

- To achieve the best texture, ensure all ingredients are at room temperature.
 - Chilling the bars after applying the peanut butter layer helps to firm them up quickly.
 - Feel free to adjust the sweetness of the icing based on personal preference.
