Description

These Bacon Jalapeño Popper Eggrolls take everything you love about the classic appetizer—crispy bacon, spicy jalapeños, and gooey cream cheese—and wrap it all in a golden, crunchy eggroll shell. Perfect for game day, parties, or anytime you’re craving a bold, snackable bite!


Ingredients

  • 8 ounces cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 6 slices bacon, cooked and crumbled
  • 45 fresh jalapeños, finely chopped (seeds removed)
  • 15 eggroll wrappers
  • Vegetable oil for frying

Instructions

  1. In a mixing bowl, combine softened cream cheese and shredded cheddar. Stir in crumbled bacon and chopped jalapeños. Season with salt and pepper.
  2. Lay an eggroll wrapper on a clean surface. Spoon about 2 tablespoons of filling onto the center. Moisten edges with water, fold bottom corner over filling, fold in sides, and roll up tightly.
  3. Heat vegetable oil in a skillet over medium-high heat until it reaches 350°F (175°C).
  4. Fry the eggrolls in batches for 2-3 minutes on each side until golden brown and crispy.
  5. Drain excess oil on paper towels before serving.

Notes

  • For a spicier filling, leave some jalapeño seeds in.
  • Serve with ranch dressing or your favorite dipping sauce.
