Description

A delightful breakfast wrap filled with scrambled eggs, crispy bacon, cheese, and roasted potatoes, perfect for a satisfying meal.


Ingredients

  • 6 large eggs
  • 2 tbsp butter
  • A pinch of cayenne
  • 1/2 tsp garlic powder
  • Salt and black pepper, to taste
  • 4 large warmed tortillas
  • 1 cup grated cheddar cheese
  • 2 cups crispy or roasted potato cubes
  • 5 cooked and sliced bacon strips
  • 1 cup cooked breakfast sausage, chopped
  • Salsa
  • Sour cream

Instructions

  1. Heat butter in a pan at a medium setting. Break the eggs into a bowl and season with spices. Pour them into the pan, mixing while cooking until the eggs are firm.
  2. Start with a warm tortilla. Add about 1/2 cup of scrambled eggs, followed by 1/2 cup of potatoes and 1/4 cup of cheese. Sprinkle on bacon or sausage, around 1/4 cup.
  3. Fold tightly and either toast it in a buttered skillet until golden or pop it in the oven at 350°F for 10 minutes.
  4. Serve with your favorite salsa and a dollop of sour cream.

Notes

  • You can substitute the potatoes with your choice of vegetables.
  • Feel free to add other toppings like avocado or hot sauce.
