- 6 large eggs
- 2 tbsp butter
- A pinch of cayenne
- 1/2 tsp garlic powder
- Salt and black pepper, to taste
- 4 large warmed tortillas
- 1 cup grated cheddar cheese
- 2 cups crispy or roasted potato cubes
- 5 cooked and sliced bacon strips
- 1 cup cooked breakfast sausage, chopped
- Salsa
- Sour cream
Instructions
- Heat butter in a pan at a medium setting. Break the eggs into a bowl and season with spices. Pour them into the pan, mixing while cooking until the eggs are firm.
- Start with a warm tortilla. Add about 1/2 cup of scrambled eggs, followed by 1/2 cup of potatoes and 1/4 cup of cheese. Sprinkle on bacon or sausage, around 1/4 cup.
- Fold tightly and either toast it in a buttered skillet until golden or pop it in the oven at 350°F for 10 minutes.
- Serve with your favorite salsa and a dollop of sour cream.
Notes
- You can substitute the potatoes with your choice of vegetables.
- Feel free to add other toppings like avocado or hot sauce.
