For the Meatloaf:
- 1½ lbs ground beef (80/20 for best juiciness)
- 6 slices bacon, cooked and crumbled
- 1 cup shredded cheddar cheese
- ½ cup breadcrumbs (or crushed crackers)
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 1 egg, beaten
- ¼ cup mayonnaise (for extra juiciness)
- 2 tbsp ketchup
- 1 tbsp yellow mustard
- 1 tbsp Worcestershire sauce
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp smoked paprika
For the Glaze:
- ¼ cup ketchup
- 2 tbsp barbecue sauce
- 1 tbsp yellow mustard
- 1 tbsp brown sugar

Instructions
Step 1: Preheat & Prepare
- Preheat your oven to 375°F (190°C).
- Line a baking sheet with parchment paper or lightly grease a loaf pan.
Step 2: Cook the Bacon
- Cook the bacon in a skillet over medium heat until crispy.
- Transfer to a plate lined with paper towels to drain, then crumble into small pieces.
Step 3: Mix the Meatloaf
- In a large bowl, combine ground beef, crumbled bacon, cheddar cheese, breadcrumbs, onion, garlic, egg, mayonnaise, ketchup, mustard, Worcestershire sauce, salt, pepper, and paprika.
- Mix gently with your hands until everything is evenly combined—be careful not to overmix!
Step 4: Shape & Bake
- Shape the mixture into a loaf shape and place it on the prepared baking sheet or in a loaf pan.
- Bake for 40 minutes uncovered.
Step 5: Add the Glaze & Finish Baking

- Return to the oven and bake for another 15–20 minutes, or until the internal temperature reaches 160°F (71°C).

- Let the meatloaf rest for 10 minutes before slicing—this helps keep it juicy.
