Description

A delicious and healthy twist on traditional avocado toast, featuring baked eggs on a bed of avocado spread over toasted bread.


Ingredients

  • 4 slices sourdough or whole-grain bread
  • 2 ripe avocados
  • 1 tablespoon lemon juice
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon freshly ground black pepper
  • 4 large eggs
  • 1/4 cup cherry tomatoes, halved
  • 2 tablespoons crumbled feta cheese
  • 1 tablespoon chopped fresh chives
  • 1 tablespoon extra virgin olive oil
  • Pinch of red pepper flakes (optional)

Instructions

  1. Preheat the Oven: Set oven to 375°F. Lightly grease a large baking dish or line with parchment paper.
  2. Arrange Bread Slices: Lay bread slices in the prepared dish forming a single layer.
  3. Prepare Avocado Mixture: In a mixing bowl, mash avocados with lemon juice, sea salt, and black pepper until mostly smooth yet slightly chunky.
  4. Spread Avocado on Bread: Distribute mashed avocado evenly across all bread slices.
  5. Form Wells for Eggs: With a spoon, create a shallow well in the center of each slice.
  6. Add Eggs: Carefully crack one egg into each prepared well, leaving yolks intact.
  7. Top with Vegetables and Cheese: Scatter halved cherry tomatoes and crumbled feta cheese over bread.
  8. Season and Drizzle: Drizzle olive oil on top and sprinkle with red pepper flakes if desired.
  9. Bake: Transfer dish to oven. Bake for 20 to 25 minutes, until egg whites are set and yolks reach desired consistency.
  10. Garnish and Serve: Remove from oven and garnish with chopped fresh chives before serving immediately.

Notes

  • For a spicier version, add more red pepper flakes.
  • This recipe can easily be doubled for serving more people.
  • Leftover avocado mixture can be stored in an airtight container for a short time, but it’s best fresh.
