A deliciously easy Apple Oatmeal Snack Cake that is perfect for any occasion.

- 1 cup butter
- 2 ½ cups all-purpose flour
- ½ cup rolled oats
- 1 ½ teaspoons ground cinnamon
- 2 teaspoons baking powder
- 1 teaspoon salt
- 1 ½ cups brown sugar
- 2 large eggs
- 2 teaspoons pure vanilla extract
- 2 cups peeled and chopped apple
- 1 cup chopped walnuts (optional)
- 1 tablespoon powdered sugar
Instructions
- Preheat the oven to 350F.
- Line an 11×7 inch baking pan with parchment paper and set aside.
- In a large bowl cream the butter and brown sugar until light and fluffy.
- Add the eggs and vanilla and beat well.
- Add the flour, rolled oats, baking powder, cinnamon and salt to the creamed mixture and beat to combine. The batter will be quite thick.
- Stir in the apples and nuts (nuts are optional).
- Spread batter evenly in the prepared pan.
- Bake for 30 to 35 minutes until golden brown and center is almost firm.
- Allow pan to cool completely on a wire rack. Dust top with powdered sugar.
- When cooled, lift the squares out with the parchment paper and cut into 12 equal squares.

- Store the cake in an airtight container for up to three days.
