Description

A deliciously easy Apple Oatmeal Snack Cake that is perfect for any occasion.


Ingredients

  • 1 cup butter
  • 2 ½ cups all-purpose flour
  • ½ cup rolled oats
  • 1 ½ teaspoons ground cinnamon
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 ½ cups brown sugar
  • 2 large eggs
  • 2 teaspoons pure vanilla extract
  • 2 cups peeled and chopped apple
  • 1 cup chopped walnuts (optional)
  • 1 tablespoon powdered sugar

Instructions

  1. Preheat the oven to 350F.
  2. Line an 11×7 inch baking pan with parchment paper and set aside.
  3. In a large bowl cream the butter and brown sugar until light and fluffy.
  4. Add the eggs and vanilla and beat well.
  5. Add the flour, rolled oats, baking powder, cinnamon and salt to the creamed mixture and beat to combine. The batter will be quite thick.
  6. Stir in the apples and nuts (nuts are optional).
  7. Spread batter evenly in the prepared pan.
  8. Bake for 30 to 35 minutes until golden brown and center is almost firm.
  9. Allow pan to cool completely on a wire rack. Dust top with powdered sugar.
  10. When cooled, lift the squares out with the parchment paper and cut into 12 equal squares.
