Description

Apple Butter Zucchini Bread is a moist and delicious treat that’s perfect for breakfast or a snack. It combines the flavors of sweet apple butter and fresh zucchini for a delightful twist on traditional bread recipes.

  • ½ cup brown sugar
  • ¼ cup apple butter
  • ½ cup plain Greek yogurt, at room temperature
  • 3 eggs, at room temperature
  • 1 tbsp vanilla extract
  • 1 cup grated zucchini
  • 1 ¾ cup whole wheat or all-purpose flour
  • 3 tsp baking powder
  • 1 tsp salt
  • ¼ cup dark brown sugar (for swirl)
  • 1 tbsp all-purpose flour (for swirl)
  • 2 tsp cinnamon (for swirl)
  • 1 tbsp salted butter, melted (for swirl)
  • 1 stick salted butter, at room temperature (for cinnamon butter)
  • ¼ cup maple syrup or honey (for cinnamon butter)
  • ½ tsp vanilla extract (for cinnamon butter)
  • 1 tsp cinnamon (for cinnamon butter)
  • pinch of sea salt (for cinnamon butter)

Instructions

  1. Preheat the oven to 350°F (175°C). Line a 9×5 inch bread pan with parchment paper.
  2. In a bowl, whisk together the melted butter, brown sugar, apple butter, yogurt, eggs, and vanilla. Stir in the shredded zucchini.
  3. Add the flour, baking powder, and salt to the wet mixture. Mix until combined.
  4. Pour the batter into the prepared pan. If desired, swirl in 2-3 tablespoons of apple butter, leaving streaks of apple butter throughout the batter.
  5. Mix the butter, brown sugar, flour, and cinnamon. Arrange the clumps over the batter.
  6. Bake in the preheated oven for 60-65 minutes or until the center is just set.
  7. In a bowl, beat the butter, maple syrup, vanilla, cinnamon, and a pinch of salt. Serve with the warm zucchini bread.
