- ½ cup brown sugar
- ¼ cup apple butter
- ½ cup plain Greek yogurt, at room temperature
- 3 eggs, at room temperature
- 1 tbsp vanilla extract
- 1 cup grated zucchini
- 1 ¾ cup whole wheat or all-purpose flour
- 3 tsp baking powder
- 1 tsp salt
- ¼ cup dark brown sugar (for swirl)
- 1 tbsp all-purpose flour (for swirl)
- 2 tsp cinnamon (for swirl)
- 1 tbsp salted butter, melted (for swirl)
- 1 stick salted butter, at room temperature (for cinnamon butter)
- ¼ cup maple syrup or honey (for cinnamon butter)
- ½ tsp vanilla extract (for cinnamon butter)
- 1 tsp cinnamon (for cinnamon butter)
- pinch of sea salt (for cinnamon butter)
Instructions
- Preheat the oven to 350°F (175°C). Line a 9×5 inch bread pan with parchment paper.
- In a bowl, whisk together the melted butter, brown sugar, apple butter, yogurt, eggs, and vanilla. Stir in the shredded zucchini.
- Add the flour, baking powder, and salt to the wet mixture. Mix until combined.
- Pour the batter into the prepared pan. If desired, swirl in 2-3 tablespoons of apple butter, leaving streaks of apple butter throughout the batter.
- Mix the butter, brown sugar, flour, and cinnamon. Arrange the clumps over the batter.
- Bake in the preheated oven for 60-65 minutes or until the center is just set.
- In a bowl, beat the butter, maple syrup, vanilla, cinnamon, and a pinch of salt. Serve with the warm zucchini bread.
