As we approach the 4th of July, I can’t help but feel excited about all the celebrations that await us. One of the best ways to show off your patriotic spirit is with these delightful 4th of July Cake Mix Cookies. They’re bright, fun, and oh-so-easy to whip up, making them perfect for busy moms like me who want to impress family and friends without spending hours in the kitchen. This recipe is a quick solution for any summer gathering, ensuring that everyone leaves with a smile—and maybe even a few crumbs on their shirt!
Ingredients
- 1 package of white cake mix (Betty Crocker super moist white cake mix 16.25 ounce box)
- 2 whole large eggs
- ⅓ cup melted unsalted butter
- 2 cups white chocolate chips, divided
- 1 cup holiday M&Ms, divided
- ½ cup sprinkles, divided
Instructions
- Preheat the oven to 350 degrees and line two baking sheets with parchment paper.
- In a medium sized mixing bowl combine the cake mix, eggs, and melted butter with a fork.
- Stir 3/4 cup of Holiday M&Ms, ⅓ cup white chocolate chips, and ¼ cup of sprinkles into the batter and mix well.
- Use a 2 tablespoon cookie scoop and create two cookie dough balls per cookie (about ¼ cup of cookie dough).
- Roll the cookie dough into a ball and then flatten the ball to about ½ inch thick and arrange 5 cookies on each baking sheet so they have room to spread (option: refrigerate the dough for 30 minutes so it’s easier to roll into balls and less sticky).
- Bake for 9-10 minutes or just until the edges start to brown – do not over bake.
- Remove from the oven and top half of the cookie with white chocolate chips and M&Ms.
- Let the cookies cool for 10 minutes on the baking sheet before transferring to a cooling rack.
- Once all of the cookies have been baked and cooled, melt the remaining white chocolate in the microwave in 30 second increments – stirring between.
- Dip the other half of the cookies in the white chocolate and garnish with sprinkles. Let cool completely.
- If any white chocolate is remaining, drizzle over the top of the white chocolate half and top with extra sprinkles (optional).
Notes
- For best results, do not over bake the cookies to maintain a soft texture.
- You can customize the colors of M&Ms and sprinkles to suit any holiday or event.
- Chilling the dough can help make it less sticky and easier to handle.
