Description

A simple and flavorful chicken dish made with just four main ingredients, perfect for a quick weeknight dinner.


Ingredients

  • 450 g chicken breast, thinly sliced
  • Salt, to taste
  • Black pepper, to taste
  • 15 ml garlic powder
  • 120 ml basil pesto
  • 1 large beefsteak tomato, thinly sliced
  • 230280 g fresh mozzarella cheese, sliced
  • Fresh basil, shredded (optional)

Instructions

  1. Set oven to 190°C to preheat.
  2. Place chicken breast fillets in a 23 cm x 33 cm baking dish. Season both sides with salt, black pepper, and garlic powder.
  3. Spread basil pesto evenly over the chicken, ensuring both sides are lightly coated.
  4. Arrange chicken pieces in a single layer, side by side, within the baking dish.
  5. Top each chicken breast piece with fresh mozzarella slices, followed by a layer of tomato slices. Lightly season with additional salt and pepper if desired.
  6. Sprinkle shredded basil over the assembled dish. Transfer to the oven and bake for 30-40 minutes, or until chicken is fully cooked and cheese is melted.
  7. Remove from oven and serve warm.

Notes

  • For added flavor, marinate the chicken in pesto for a few hours before cooking.
  • Serve with a side salad or over pasta for a complete meal.
