A simple and flavorful chicken dish made with just four main ingredients, perfect for a quick weeknight dinner.

- 450 g chicken breast, thinly sliced
- Salt, to taste
- Black pepper, to taste
- 15 ml garlic powder
- 120 ml basil pesto
- 1 large beefsteak tomato, thinly sliced
- 230–280 g fresh mozzarella cheese, sliced
- Fresh basil, shredded (optional)
Instructions
- Set oven to 190°C to preheat.
- Place chicken breast fillets in a 23 cm x 33 cm baking dish. Season both sides with salt, black pepper, and garlic powder.
- Spread basil pesto evenly over the chicken, ensuring both sides are lightly coated.
- Arrange chicken pieces in a single layer, side by side, within the baking dish.
- Top each chicken breast piece with fresh mozzarella slices, followed by a layer of tomato slices. Lightly season with additional salt and pepper if desired.
- Sprinkle shredded basil over the assembled dish. Transfer to the oven and bake for 30-40 minutes, or until chicken is fully cooked and cheese is melted.
- Remove from oven and serve warm.
Notes
- For added flavor, marinate the chicken in pesto for a few hours before cooking.
- Serve with a side salad or over pasta for a complete meal.
